Balsamic dressing

Once we had established a following for both olive oils and vinegar, and had talked to many customers are many markets, we tried combining some of the flavours to see what worked. Sue and I spend one hilarious day in the kitchen of the Broke Hall experimenting with what did and didn't work. Some abject failures, but three resounding successes: Lemon Myrtle Balsamic Dressing, Lime Chilli Balsamic Dressing and Chilli & Garlic Balsamic Dressing were born and continue to be hugely popular combinations. The one recent variation is to swap out the dark balsamic for white balsamic in the lime chilli version - gives it a bit more of a Thai look and feel.
