This is a lighter, brighter version of the 'standard' caramelised balsamic. Made from white grapes into a vinegar by secondary fermentation, then reduced and sweetened to give a depth of flavour not normally found. A sure fire winner when matched with lime and chilli oil to give a variation on Thai flavours.
